Maggie’s Apple Crisp

This recipe was shared with me by a dear friend who has since passed on. It is one of the warmest and most comforting things that I make, which was just so Maggie. It’s simple and perfect for fall Mabon celebrations or a sweet finish to a Sunday brunch.

INGREDIENTS

  • 1 1/2 cup water

  • 1 1/2 cup packed light brown sugar

  • 1/2 stick butter, melted

  • 2 Tbsp + 1 1/2 cup flour

  • 1/2 tsp salt

  • 1 1/4 tsp cinnamon

  • 3/4 tsp nutmeg

  • 2 1/2 lbs apples, cored and cut into wedges (between 5-7 apples, or a quarter-peck, if you measure like it’s 1809)

  • 1 1/2 cup oatmeal

  • 1 stick room temperature or slightly cold butter, cut into small pieces

DIRECTIONS

  1. Preheat oven to 350 degrees.

  2. Spray your dish with cooking spray or lightly butter. (I use a 9x7 or a larger casserole dish, it should be at least 2-inches deep)

  3. Combine water, 3/4 cup briwn sugar, melted butter, 2 Tbsp flour, salt, 1 tsp cinnamon, and 1/2 tsp grated nutmeg. Whisk until smooth.

  4. Place apples in your dish and pour the liquid over them. Mix well.

  5. In another bowl, combine the remaining brown sugar, cinnamon, nutmeg, flour, oatmeal and butter.

  6. Using your fingers, mix the ingredients together until it resembles a coarse, crumb-like mixture.

  7. Sprinkle the crumb mixture over the apple mixture.

  8. Bake for 1 hour or until the apples are tender and the crust is very golden. IT WILL SMELL SO GOOD, TRUST.

  9. Serve warm or cooled, with ice cream, whipped cream, or plain!
